Orzo with Asparagus, Mushrooms and Caramelized Lemon

When spring and Easter are around the corner,my small village comes to my mind. This year is different though, as due to thepandemic we were not able to visit. During our visits, I always loved to walk around theforest nearby, where one could find fresh herbs and wild asparagus as it grows a lot inthat area. A few days ago, I received a package from my mother, full of goodies! Eastercookies, a greek sweet dough easter bread called “tsoureki” and a bunch of wildasparagus. So, I decided to revive an old recipe; orzo pasta combined with wildasparagus with a twist of mushrooms and caramelized lemon. The results of this mixingcannot be described; absolutely gorgeous.*Instead of wild asparagus, you can use any variety you can find on your local market.
ORZO WITH ASPARAGUS, MUSHROOMS & CARAMELIZED LEMON

Ingredients
- 1 lemon (zested & sliced)
- 3 tbsp extra virgin olive oil
- 2 big portobello mushrooms (sliced)
- 400 gr asparagus (chopped)
- 1 red pepper (finely chopped)
- 1 leak (finely sliced)
- 1 cup of Ilis orzo
- 2 garlic cloves
- 1 tbsp salt
- ½ tsp pepper
- ½ tbsp oregano
- 2 cups vegetable or chicken stock

- Zest the lemon and finely slice it.
- In a deep pan, add 1 tbsp of olive oil and the lemon slices. Cook them until theycaramelize for 4-5 minutes. Flip them over and cook for another 1-2 minutes.Remove them from the pan and set aside.
- Add 1 tbsp of olive oil in the same pan and start cooking the asparagus and themushrooms. We want the mushrooms to get a nice colour and crunchiness andthe asparagus to soften. If needed, add extra olive oil and let them cook for 10minutes. When ready, set aside.
- In the very same pan, add the rest of the olive oil and all the remaining veggies(leak,pepper,garlic). Stir until the leak gets cooked.
- Add the orzo pasta,salt,pepper and oregano and stir the ingredients for 1-2minutes.
- Pour in the stock and the lemon slices and keep stirring.
- Turn the stove to medium heat, and let it cook for 10 minutes.
- Remove the lemon slices and add all the vegetables and the zest.
- Stir them all together and for 1-2 minutes and check the taste (in case you needmore salt & pepper)
- Serve while hot!
